RECIPES OVER THE ROAD: MEATBALL SOUP
Welcome to Recipes Over the Road, a cooking show for truck drivers. We know it can be hard to cook in the cab after a day of driving, but it doesn’t have to be. There are plenty of recipes that are easy to make, healthy, and most importantly: taste good! Join Chef Linda as she shares her Crockpot Meatball Soup recipe with us!
Ingredients:

1 small onion, diced

2 garlic cloves, minced

1 medium carrot, diced or shredded

1 stalk of celery, chopped

2 tsp. dried basil

1 tsp. oregano

3/4 tsp. thyme
-
1 32 oz. can of diced tomatoes

3 Tbsp. tomato paste

1 bay leaf
-
32 oz. beef or chicken broth
-
1 medium zucchini, chopped into halves or quarters

1 tsp. balsamic vinegar
-
Homemade meatballs or 1 family-size bag
-
Salt, to taste

Pepper, to taste
Instructions:
Toss everything in the Crockpot and turn it on Low for 8 hours or High for 4 hours. Enjoy!
